Solar Recipe – Chocolate Chip Muffins
Can you bake cakes in a solar oven? Yes ! Make delicious muffins with a 100% plant-based, gluten-free recipe? Exactly! It requires a little trickery, a few more ingredients than usual… but in the end, it’s downright stunning.
Serves 5 – Preparation : 15 min – Cooking time : 1 h 15 – Equipment : solar oven
Ingredients
- 70 g chickpea flour (available in organic grocery stores)
- 50 g starch (arrowroot, corn, potato, etc.)
- 40 g almond powder
- 1 tbsp. to c. baking powder (“chemical” yeast for cakes)
- 1 large pinch baking soda
- 1 pinch salt
- 2 large ripe bananas or 3 small ones (= 180 g)
- 70 g mild olive oil (= 70 ml) + 1 drizzle
- 1 c. to s. cider vinegar
- 2 c. to s. vegetable cream (rice, soy, etc.)
- 80 g unrefined caster sugar
- 1 c. to c. heaped vanilla powder
- 1 large handful of chocolate chips
Recipe
- Preheat the solar oven (this is essential for this recipe).
- Carefully mix the chickpea flour, cornflour, almond powder, sugar, vanilla powder, baking powder, bicarbonate and salt in a bowl.
- In a shallow dish, cut and mash the bananas with a fork until pureed.
- Add the 70 ml oil, vegetable cream and vinegar and mix well. Stir into the flour mixture.
- Add half the chocolate chips and stir.
- Oil and flour the muffin tins. Fill each mold halfway with batter (no more).
- Add the last nuggets on top, pressing them in halfway. Bake for about 1h15, until the top is golden brown.
- Let cool before unmolding and serving.
- The muffins keep for up to 3 days in a tin, but are best warm.
