Solar recipe: Eggplant, zucchini and black bean curry

Ingredients for 2 persons* :
(*very hungry or 4 people with naans)
- 1 small amount of olive or neutral oil
- 2 small onions
- 2 garlic cloves
- 1 eggplant
- 1 small zucchini
- 200g cooked black beans (adjust according to taste)
- 200g coconut milk
- 1 pinch salt
- 1 teaspoon turmeric
- 1 teaspoon curry powder
- 1 small amount of water (adjust according to desired consistency)
Preparation of eggplant, zucchini and black bean curry
- Pour the oil into the tube with the chopped onions and chopped garlic, and cook for 15-20min.
- Add the chopped vegetables to the tube, along with the spices and salt, and cook for about 1 hour.
- Add the coconut milk and black beans, adding a little water according to the desired consistency.
Bake for approx. 30min.
NB: The cooking times indicated correspond to sunny weather with a few cloudy periods. For cooking in the morning, in bright sunshine and/or in the afternoon, you may need to reduce each cooking time slightly.
